Imhoff Kitchen :: Lasagna Roll Ups

Lasagna Roll-Ups

I wish I could take credit for this amazing dish.  It's one of those dishes that get put into the monthly rotation here at the Imhoff' Household.  Everyone loves it, even the boys.

This super simple meal is VERY easy to make, but it does take about a hour to put together, including baking time.  That is the only drawl back.  This also makes a great housewarming/meal train dinner as it's easy to make ahead and freeze when ready to eat.


Instructions:
Cook lasagna noodles per box instructions.  While the water is heating up, go ahead and ground the beef and leave off to the side when complete.

While pasta is cooking, prepare the cheese mixture.  I add 15 oz. ricotta cheese, 1 egg, 2 cups mozzarella cheese, and a handful and a half of parmesan cheese.  Mix all together and add basil.


When the noodles are ready [al dente], lay them out flat.  I put mine on tin foil before adding to the pan.  Once flat, add the cheese mixture, followed by the ground beef, followed by your favorite can of spaghetti sauce.

** Note: I do not eat ground beef, therefore, I leave of the meat on my rolls, and only add them to the rest of the families.



After everything has been added to the flat noodles, you'll want to add a little bit of sauce to the bottom of the dish.  This way the lasagna rolls wont stick.  Roll up each individual roll and place them side by side, as many that will fit.


After all rolls have been added, pour some more sauce on top of each roll, then sprinkler mozzarella and parmesan all over - YUM!


Here is my cute dish for myself without meat :)


Bake at 375 degrees for 35 minutes covered.  Then the last 7 minutes, take off the cover and continue to back.  I usually broil the last minute or two until the cheese gets bubbly and golden.

Sprinkle with fresh basil for amazing taste.
My kiddos won't eat it if I add to their dish, so I always skip that part!


Wa-La!  Dinner is served!  I always pair with a simple salad and bread.
