Lasagna Roll-Ups

I wish I could take credit for this amazing dish.  It's one of those dishes that get put into the monthly rotation here at the Imhoff' Household.  Everyone loves it, even the boys.

This super simple meal is VERY easy to make, but it does take about a hour to put together, including baking time.  That is the only drawl back.  This also makes a great housewarming/meal train dinner as it's easy to make ahead and freeze when ready to eat.


Instructions:
Cook lasagna noodles per box instructions.  While the water is heating up, go ahead and ground the beef and leave off to the side when complete.

While pasta is cooking, prepare the cheese mixture.  I add 15 oz. ricotta cheese, 1 egg, 2 cups mozzarella cheese, and a handful and a half of parmesan cheese.  Mix all together and add basil.


When the noodles are ready [al dente], lay them out flat.  I put mine on tin foil before adding to the pan.  Once flat, add the cheese mixture, followed by the ground beef, followed by your favorite can of spaghetti sauce.

** Note: I do not eat ground beef, therefore, I leave of the meat on my rolls, and only add them to the rest of the families.



After everything has been added to the flat noodles, you'll want to add a little bit of sauce to the bottom of the dish.  This way the lasagna rolls wont stick.  Roll up each individual roll and place them side by side, as many that will fit.


After all rolls have been added, pour some more sauce on top of each roll, then sprinkler mozzarella and parmesan all over - YUM!


Here is my cute dish for myself without meat :)


Bake at 375 degrees for 35 minutes covered.  Then the last 7 minutes, take off the cover and continue to back.  I usually broil the last minute or two until the cheese gets bubbly and golden.

Sprinkle with fresh basil for amazing taste.
My kiddos won't eat it if I add to their dish, so I always skip that part!


Wa-La!  Dinner is served!  I always pair with a simple salad and bread.

Pampered Mom's Fig & Cheese Platter

Oh Guys - talk about YUMMY!!!  I have to tell you how this all came about.  The family I work for has two girls.  These girls are super entrepreneurial ... is that a word?!  But they have started just a few businesses in their day ... Two Sisters Eggs and NOW ... Two Sisters Figs!

So they brought me these delicious Figs.  OF COURSE I had to do something with them and make yummy meals and snacks!  So we made this Fig based tiered platter.  One the Top we have [1.] Figs and Basil with drops of Goats Cheese, Middle are [2.] Goat Cheese and Fig Jam with Basil Wrapped Prosciutto on Brochetta Bread, and at the bottom are [3.] Grapes and Cheese.  Does it get any better than this?! ohhhh ... don't forget the wine!

The Pampered Mom's Thin Mint Homemade Ice Cream

Can we just talk about WILL POWER for a moment?  I mean seriously, I have had a FULL box of Thin Mint Girl Scout Cookies in  my freezer since F E B R U A R Y!  It's literally the first thing you see when you open it up too.  I mean ... not just me, but my entire family right?!  We knew we would make homemade ice cream with the box ... so there was that to look forward to, but literally, no one even sneaked a cookie from the box ... I don't know about you, but I'm impressed!

So here it is ... the long awaited Thin Mint Homemade Ice Cream in all its glory.  And let me tell you ... there was not an ounce left after the boys got a hold of it!  This time I added a half roll into the ice cream process, and then we used some to sprinkle on the top.  Next time I'll probably add a whole role, but I didn't know how strong the flavors were going to be.

Pampered Mom's Summer S'mores Bar

This past weekend we had a few of our neighborhood friends over for a super casual night.  The boys and I made homemade icecream and then at the last minute we decided to make some s'mores.  But not just your "usual go-to s'mores," nooo... we needed MORE!  

Our Summer S'mores bar included:
Honey, Chocolate, and Cinnomon Graham Crackers
Strawberry and Reg. Marshmallows
Hershey's Milk Chocolate, Hershey's Cookies n' Cream Chocolate, and Chocolate Mint Patties

YUMMO!

One of our favorite combos ...

Chocolate Covered Strawberries
1. Choc Graham Cracker
2. Strawberry Marshmallow
3. Milk Chocolate

Old Fashioned Brownies via The Pampered Mom

Super Easy Old Fashioned Brownies
 
Ingredients:
1.5 cups of flour
2 cups sugar
1/2 cup cocoa
1/2 tsp. salt
1 cup oil
4 eggs
2 tsp. vanilla
TT powdered sugar
 
Directions:
Mix all ingredients [except powdered sugar] together on medium speed for a minimum of four minutes.  Bake at 350 degrees for 30 minutes.
Let cool, then dust with powdered sugar when complete

Pampered Mom's Easy Peasy Fruit Crisp Recipe

We still have the Fourth on our minds here in the Imhoff Household, but I couldn't help but share this super easy dessert that I make YEAR ROUND!  Obviously these ones below are made for the Fourth of July, but just by changing the recipe, you can adapt this sweet treat for just about any holiday or season!
 
For Summer ::  Peach
Fall :: Apples
Winter :: Cranberry or Cherry
Spring :: Mixed Berry [shown below]





The Crisp:
2 parts bisquick
1 part sugar
1 part melted butter
* mix together *


Add Fresh Fruit to any dish and sprinkle with sugar to get the juices flowing, cover with crisp in patches or shapes.  For Apples, sprinkle with cinnamon and sugar instead!

A Lesson on Baking

I want to make sure and introduce baking to the boys.  It's so important to me that they know their way around the kitchen and are able to make and bake simple and traditional items.  SO, today we learned how to make chocolate chip cookies!
 
It went beyond just dumping and stirring.  Braeden had to read the entire recipe to me and ask questions about what certain things were, and Bayler was in charge of preparing all the ingredients.  It was the first time baking in the new house and I must say ... it's more fun when you have a lot more space to bake!

















These boys were so excited to eat what they made!  And if you can't tell, they are EXHAUSTED!  Not enough sleep + making two boys be patient while the cookies baked = Slap Happy!  They couldn't stop giggling for the photo!  Love these two!
