Pecan Cheesecake .. the Pampered Mom's Fav

I can across this recipe a few months back and packed it inside my recipe binder under "Holiday's."  SO
I decided Christmas Eve would be the perfect time to try this super delicious looking cake ... and boy am
I glad I did. This is now my  go-to dessert ... The Pampered Mom's Special Cheesecake!

If you like Pecan Pie and if you like cheesecake, this is the perfect combination of both.




Pecan Pie Cheesecake Ingredients

Crust:
2 cups vanilla wafer or graham cracker crumbs
1/4 cup packed brown sugar [be generous]
1/2 cup butter, melted

Pecan Layer:
1 cup sugar
2/3 cup dark corn syrup
1/3 cup butter, melted
2 eggs
1 1/2 pecans, chopped
1 teaspoon vanilla extract

Cheesecake Top:
3 - 8 ounce packages of cream cheese [softened}
1 1/4 cups packed brown sugar
2 tablespoons all-purpose flour
4 eggs
2/3 cup heavy whipping cream
1 teaspoon vanilla extract


Pecan Pie Cheesecake Directions:

preheat oven to 350 degrees.  Make crust by combining vanilla wafer crumbs or graham cracker crumbs and brown sugar. Stir in melted butter.  Pack down in a springform pan.  Make sure when you do this that you pack down and up all sides, almost creating a crater for the pecan layer.  [You don't want the pecan layer to touch the springform pan.  Bake for 6 minutes, take out and let cool on the side.

Mix all ingredients in a medium sized saucepan.  Bring to a boil over medium high heat.  Reduce heat and continue to stir until sauce thickens, about 8 to 10 minutes.  The sauce will look almost white when you are finished.  Pour into crust crater and set aside, again not letting the pecan layer touch the sides of the pan.

Reduce heat in oven to 325 degrees.  Mix cream cheese together on medium until creamy.  Add brown sugar and flour until fluffy.  Add eggs one at a time, and make sure to mix well after each one.  Stir in heavy cream and vanilla.  Pour in springform pan on top of crust and pecan layer.  Add a small pan on bottom rack with very hot water.  Put cheesecake in oven for 1 hour.  Turn off oven and leave cheesecake in oven for another hour with the door closed.  Take out cheesecake and run knife around the sides of the pan to keep the cake from sticking.  Place in refrigerator for at least four hours before serving.

I absolutely LOVE decorating for Christmas, and around here, it isn't an easy fete.  Decorating at our house is an event.  It takes all day and must include a number of items ... for instance ...

Step 1:  Bring up Christmas Bins
Step 2:  Go out and get Christmas Tree
Step 4: MUST HAVE FLOCK
Step 5: Christmas Music
Step 5:  Hot Chocolate in the Crock Pot

It's Christmas Time - Trimming the Tree 2012

Christmas time is finally here, I wait so patiently throughout the year, and I get a little too excited to put up the decor and Christmas tree.  This year was no different.  The tree was up the weekend after Thanksgiving, hot cocoa on the stove and Christmas music filtering throughout the house ... ahhh ... bliss!

This is the first year I didn't buy any more ornaments and I am SO glad I didn't.  I couldn't event use all the ones I had.   Still love my real trees!

Thanksgiving with the Imhoff's 2012

At our house, setting up is something that is done at least a month in advance.  We bring out all of the boxes, and start decorating to taste.  This year, the kids were able to help with our family Thanksgiving Tablescape. It seems like each year we add something just a little different, and this year was no exception.  I love the rustic warmness it creates, and I can't wait to sit down on Thanksgiving and enjoy it to it's full potential!








Unlike last year, we will not be hosting Thanksgiving this year, which I am a little bummed about.  Oh well, at least I'll keep a clean kitchen :)

Imhoff Halloween 2012

 Oh what fun Halloween was this year! 

I would have to say that this was the first year when both kids really "got it."  They each had their individual Halloween parties at school, which meant they both got to wear their costumes instead of the usual school clothes.  I also got to go to attend each of their parties, which makes me SO thankful for having a flexible schedule.  [Thanks Hubby!]

Since most years we have stayed around our neighborhood, I thought it was time to head up my parents house's and let them see the kids on Halloween this year.  SO glad I did.  We grabbed dinner out on our way, and headed to my parents neighborhood.  It was crazy to take the kids trick-or-treating to the same places I used to go to on Halloween.  Really Crazy!  In fact, really crazy that a lot of the people still live in the same house.  Years ago they were handing me candy, and now they are seeing my kids do the same thing.  It felt like home for sure!







Braeden was a Top Gun Fighter Pilot.  We was SO handsome in it!  And our Bear was a fireman, which he adored.  Now we just have to figure out what to do with all of this candy.  What do you all do?  Keep it, save it? Throw some out?  One things for sure, we're not eating it all!! :)

Braeden's 5th Birthday Party

Tonight was Braeden's 5th Birthday Party.  I still can not believe how fast he is growing up.  We opted for an outdoor party this year, full of food, fire and friendship.  We started the day off setting up, throwing around the footballs and playing in the creek.  That evening, we cooked hot dogs and s'mores over the fire.


 

 


Happy Birthday Braeden!  Love you!!
